Garlic Scape Pesto
1 cup (about 10-16) chopped (about a 1/4") garlic scapes
1/2 cup olive oil
1/2 tsp fine sea salt
fresh ground pepper to taste
juice of 1 lemon
1/2 cup grated parmesan cheese
Puree first 5 ingredients in a blender. Once done, stir in the parmesan cheese.
This will make approx. 2-250ml jars. Mom likes to put it into 2 jars and freeze
it to use whenever. Serve the pesto with crackers or baguette or put it on your
favourite pasta! Yum!
